I think we can all agree that everyone is in survival mode and we are all eating ALL the comfort foods. Is it just me?

I am fully in being comforted in every facet of my life. I want to wear comfy clothes (see ya, bras!). I want to watch my fave shows (trashy TV, yes please). And I want to eat my most comforting dishes and churros are usually at the top of that list.

Churro Snacks

Ingredients

  • 5 cups Honeycomb cereal
  • ⅔ cup brown sugar
  • ½ cup butter (1 stick)
  • ⅓ cup corn syrup
  • 1 teaspoon vanilla
  • ¼ teaspoon baking soda
  • ½ cup granulated sugar
  • 1 ½ teaspoons cinnamon

How To Make Churro Snacks

  1. Preheat oven to 350 degrees F and line a baking sheet with parchment paper.
  2. Pour cereal into a large bowl, then set aside.
  3. In a medium-sized saucepan, add brown sugar, butter, and corn syrup. Stirring constantly, bring mixture to a boil then continue cooking for 1 more minute.
  4. Remove pan from heat and stir in vanilla and baking soda. Mixture will bubble and expand.
  5. Pour the mixture over the cereal and toss to evenly combine.
  6. In a small bowl, sift together granulated sugar and cinnamon, then sprinkle over the cereal. Toss again until evenly coated.
  7. Transfer cereal to the prepared baking sheet and bake for 8 minutes, stirring halfway through.
  8. Allow cereal to cool then break into bite-sized pieces. Store in an airtight container.
